Summary

My recipe book has come about because I love to fish. I love people, too. A few miles from where I live is a pier where I fish. I meet all kinds of people there. Some of them are diabetic. I am, too; therefore they and I have something in common to talk about—diabetes. I discovered that diabetic people complain that they do not have enough variety of foods to eat. They are miserable and they don’t know what to eat. I told some of them what I cook at home and they were very interested.

I had read a lot of magazines and articles about diabetes and I used food recipes that were tasteless, so I decided to write a book containing the traditional recipes that my family had cooked for years. These have a background from the traditional cooking of my mother and grandmother. Because I was a working woman, I had stopped using these recipes.

Since becoming a diabetic I had used foods with substitute sugars which were endorsed for diabetics. I was taking vitamins and minerals, keeping a strict diet, and my sugar level was uncontrollable even though I was taking insulin. I was continuously hungry. I became a complainer and a difficult person to live with.“I am hungry! I am hungry!” Grocery shopping became a burden for me because I had to read all product labels to avoid sugars.

By chance one day in a library my husband read a summary from a doctor’s book warning and giving notice to people about sugar substitutes. My husband suggested for me to try what the summary said. “You are as crazy as the author of that book,” I said, but he kept talking to me about it for several days and I decided to test this theory. I avoided substitute sugars in coffee, tea, cookies and any other product. To my surprise, my blood test showed normal level. I stayed away from substitute sugars for five days straight. This was my “Eureka.” My sugar level was almost normal and I shouted with joy because I was a happy person. My husband was happy, too, because I had followed his suggestion.

Well, it made a lot of sense. I had nothing to lose. Yes, I lost the excess sugar in my bloodstream. I am enjoying my cooking and life. I am not hungry anymore. I dedicate my recipes to diabetics. These recipes will assist newlyweds and mothers and dads who do the cooking for a healthy family.
