Foreword
Consumer and medical media are increasingly reporting the skyrocketing incidence of inflammatory disease in the United States. In 2002 and 2004, Time magazine devoted extensive coverage to the topic. One issue focused on the debilitating disease of arthritis. The other examined the wide-ranging effects of inflammation and linked it to heart attacks, cancer, Alzheimer's, and diabetes.
Inflammation Nation is about my documented discovery of the relationship between common foods in the American diets and inflammation. That's right - food and inflammation. It grew out of my nearly lifelong struggle with and ultimate victory over a severe condition the medical community calls arthritis. I call my condition what it is: inflammation and pain caused by sensitivity to toxic food chemicals.
In Inflammation Nation I expose:
- The clear connection between toxic food chemicals and inflammation,
- the liberal use of toxic food chemicals in common foods,
- the lack of testing of these toxic food chemicals, and
- the inadequate labeling of prepared and processed foods that contain toxic food chemicals.
Most important, Inflammation Nation offers hope for curbing the inflammation epidemic by identifying immediate actions that you can take to enhance your well-being. On the basis of breakthrough discoveries made in thorough investigations, I am able to provide an extensive list of specific foods and food ingredients that consistently cause inflammation. Purging these foods from my kitchen and avoiding them when I go out to eat has allowed me to heal. I hope the same will be true for you.
There is a widespread misconception that food has nothing to do with inflammation and pain. Food has a lot to do with both. My life, the experience of others, and the food investigations I've been involved with for over two decades prove it.
